Description

Verietal Corvina and Corvinone 65%, Rondinella 20%, Molinara, Croatina, Pelara 15%.
Drying the grapes are left to dry for about 3 months in drying rooms with controlled temperature and humidity.
Fermentation Between December and January the grapes are de-stemmed and crushed softly to respect the integrity of the peel. They are then fermented in stainless steel tanks with continuous and extended pressing, and the grape must is oxygenated for about 50 days with delastage at a controlled temperature of 8°-25° C.
Ageing Matures in wooden barrels for about 36 months and then 12 months in the bottle.
Characteristics: Ruby red colour with intense garnet highlights. Its bouquet embraces the nose with hints of ripe black cherries, marasca cherries, ending with a spicy aroma of cinnamon, black pepper, cocoa and coffee. It is a structured wine, silky and embracing, and extremely elegant wine that holds all the typical Characteristics: of the Classica zone. Its soft and juicy maraschino cherry effuses with a great expression of balsam. This wine is perfect for being served with game, barbecued meat, boiled meat and cheeses of different maturity. Perfect also with international dishes with modern flavours. Suggested serving temperature: 18°C.
